I just made another batch. Takes maybe 10 minutes. I use meringue, because I use the yolks for the pudding, so might as well do something with the whites. It's a big batch! Half the recipe and it's good for a 8x8 dish
Whisk together 1C sugar, flour & amp; salt Whisk in 1 / 2C milk and egg yolks. In a saucepan, place 3C milk and bring to a simmer. Whisk 1C hot milk into egg mixture. Whisk egg mixture into hot milk and bring to boil, stirring constantly. Cook until thickened ~ 3 minutes. Remove from heat and add butter and vanilla, stir until butter melts.
Arrange wafers in the bottom of 13 * 9 baking dish & top with bananas. Pour pudding over bananas.
Beat egg whites and tartar on high, gradually adding 1 1 / 3C (266g) sugar until soft peaks form. Spoon over pudding and seal edges.
